
Hoba Miso is a typical preparation from the Japanese city of Takayama with a very appealing appearance, because this dish is prepared and served on a dried magnolia leaf.
Originally, miso and vegetables fermented in miso were used; today, the variety of ingredients is much greater: e.g., beef, poultry, or fish, various vegetables such as mushrooms, onions, etc.
Preparation:
- Place miso, meat or fish, and finely chopped vegetables on a magnolia leaf and cook over a Konro grill.
- Place the magnolia leaf with the grilled ingredients on a plate.
- Add some Kujo Negi leek dressing.
