Onigiri are rice snacks that most people know as a kind of triangular sushi, although there are various shapes such as rice balls. The same rice used for sushi is used, but it is not seasoned with vinegar. Since Onigiri are eaten as a snack, they are somewhat larger than sushi. In this recipe, we opted for a non-filled version, but with a topping of pearls. The pearls were made using a molecular gastronomy technique from Yuzu Sake and Ponzu. Similar to caviar, the pearls are crunchy and burst when bitten into.
Yuzu Sake pearls give the Onigiri a lemony freshness, Ponzu adds umami. Of course, you can also mix the pearls.
Ingredients for Onigiri with pearls
- 100 g sushi rice (buy here)
- 1/2 Nori sheet (buy here)
- Pearls of Yuzu Sake
- Pearls of Ponzu

Preparation of Onigiri
1. Cook sushi rice according to the instructions.
2. Form rice triangles. Of course, you can do this by hand without a mold. However, to achieve more uniform shapes, it is recommended to use our special Onigiriform made of wood.

3. Fold the nori sheet around the rice so that the top corner of the rice remains uncovered.
4. Slightly press the top tip of the rice triangle Onigiri. Place Ponzu pearls or Yuzu Sake pearls on top.
5. Arrange on a plate or platter - done!
