A type of miso paste that is rather rarely used in Europe is the so-called red miso paste or dark miso paste. The difference from light miso pastes lies in the longer maturation time. During this time, fermentation progresses and the flavor of the paste becomes stronger. At the same time, the color darkens and changes to a reddish or brownish hue.
This red miso paste is therefore a longer-aged white miso paste.

- classic for miso broth, which then turns out to be more flavorful
- as an ingredient for hearty sauces and soups
- for marinating fish and meat
Used as Ramen Miso, the paste conjures a wonderfully full-bodied Miso Ramen Soup.
In contrast to white miso paste, this paste is best combined as a marinade with darker meats such as pork.

The Japanese manufacturer founded its company 170 years ago. Even today, in the 7th generation, the company is still run by the family. Unlike many other miso producers, the manufacturer places great importance on fermenting and aging the miso pastes traditionally in wooden barrels as in the past. What is miso?
