Description Traditional Red Miso Paste 200 g

A type of miso paste that is rather rarely used in Europe is the so-called red miso paste or dark miso paste. The difference from light miso pastes lies in the longer maturation time. During this time, fermentation progresses and the flavor of the paste becomes stronger. At the same time, the color darkens and changes to a reddish or brownish hue.

This red miso paste is therefore a longer-aged white miso paste.

Such a red miso paste is used in Japan:

  • classic for miso broth, which then turns out to be more flavorful
  • as an ingredient for hearty sauces and soups
  • for marinating fish and meat

Used as Ramen Miso, the paste conjures a wonderfully full-bodied Miso Ramen Soup.

In contrast to white miso paste, this paste is best combined as a marinade with darker meats such as pork.

About the manufacturer

The Japanese manufacturer founded its company 170 years ago. Even today, in the 7th generation, the company is still run by the family. Unlike many other miso producers, the manufacturer places great importance on fermenting and aging the miso pastes traditionally in wooden barrels as in the past. The ingredients are carefully selected and preferably sourced from local production.

What is miso?

Miso is a traditional Japanese paste made from fermented soybeans, rice, and barley. The taste is salty, sour, and depending on the variety, sweet. And of course, every miso has a lot of umami. Depending on the manufacturer and blend, the proportions of rice and grains vary, resulting in different flavor profiles and intensities. Miso is used, among other things, for the classic miso soup as well as for many other dishes of the Japanese cuisine.
